Ingredients



For the Chicken

1 lb chicken thighs, finely diced

½ tsp avocado oil

1 tbsp soy sauce

1 tbsp garlic powder

1 tbsp onion powder

1 tbsp smoked paprika

Juice of ½ large lime

½ tbsp powdered monk fruit sweetener

Salt and black pepper, to taste

Optional: 1 tbsp gluten-free flour or cornstarch

For the Base

8 oz high-protein, low-carb pasta

For the Cucumber Cabbage Slaw



¼ head cabbage, thinly shredded

3–4 Persian cucumbers, thinly sliced

1 carrot, shredded

3 scallions, sliced

1 jalapeño, thinly sliced

Large handful fresh cilantro, chopped

1 tbsp sesame oil

3 tbsp rice vinegar

2 tbsp tamari or soy sauce

Salt and pepper

1 tbsp toasted sesame seeds

Creamy Bang Bang Sauce



3 tbsp mayonnaise

2 tbsp sriracha

1½ tbsp unsweetened ketchup

Juice of ½ lime

¼ tsp cayenne pepper

½ tsp powdered monk fruit sweetener

2 tbsp water (optional)

Instructions

Step 1: Cook the Chicken

Place the diced chicken into a bowl. Add avocado oil, soy sauce, garlic powder, onion powder, smoked paprika, lime juice, sweetener, salt, pepper, and optional cornstarch. Mix until evenly coated.

Bake at 400°F (200°C) for 32 minutes, or air fry at 400°F for 22 minutes, until fully cooked and lightly browned.

Step 2: Prepare the Base

Cook the high-protein pasta according to the package instructions. Drain and set aside.

Step 3: Make the Fresh Slaw

Combine shredded cabbage, cucumbers, carrot, scallions, jalapeño, cilantro, sesame oil, rice vinegar, soy sauce, salt, pepper, and sesame seeds. Toss until well combined.

Step 4: Mix the Bang Bang Sauce

Whisk together mayonnaise, sriracha, ketchup, lime juice, cayenne, and sweetener. Add water if you'd like a thinner consistency.

Step 5: Assemble the Power Bowl
