1½ lbs baby Yukon Gold or fingerling potatoes

Olive oil

1½ tbsp garlic powder

2 tbsp dried oregano

Salt and pepper

Freshly grated Parmesan cheese

Greek Yogurt Sauce

2 cups Greek yogurt

1 Persian cucumber, grated

¼ cup fresh dill, chopped

1 garlic clove, grated

Juice of ½ lemon

1 tsp olive oil

Onion Salad

1 large red onion, thinly sliced

4–5 tbsp fresh flat-leaf parsley, finely chopped

Juice of ½ lemon

2 tbsp sumac

Step 1: Prepare the Mediterranean Chicken

In a large bowl, add 2 lbs boneless, skinless chicken thighs. Drizzle with 1 tbsp olive oil, then squeeze in the juice of 1 lemon. Add 4 minced garlic cloves, 1½ tbsp tomato paste, 1 tbsp paprika, 2 tsp dried parsley, 1 tbsp garlic powder, ½ tbsp onion powder, ½ tsp chili flakes, and generous pinches of salt and pepper. Toss until well coated.

Spread onto a parchment-lined baking sheet and bake for 30–35 minutes until fully cooked. You can also cook the chicken in an air fryer for an easy alternative.

Bring a large pot of salted water to a boil and cook 1½ lbs baby Yukon Gold or fingerling potatoes until fork tender. Transfer them to a parchment-lined baking sheet and gently smash each potato.

Drizzle generously with olive oil and season with 1½ tbsp garlic powder, 2 tbsp dried oregano, salt, and pepper. Roast at 425°F (220°C) for 30–40 minutes, flipping if needed, until golden brown and crispy. Immediately sprinkle with freshly grated Parmesan cheese.

Combine Greek yogurt, grated cucumber, fresh dill, grated garlic, lemon juice, olive oil, salt, and pepper in a bowl. Stir until smooth and creamy.
