¼ teaspoon white pepper

For the Noodles

690g frozen udon noodles

Or 250g dried thick egg noodles or rice noodles

For the Stir-Fry

½ tablespoon avocado oil

5 cloves garlic, minced

2 teaspoons ginger paste

1 small brown onion, thinly sliced

1 red capsicum, thinly sliced

1 green capsicum, thinly sliced

200g white mushrooms, sliced

4 spring onions, cut into 1-inch pieces

5 dried chilli peppers or ½ teaspoon chilli flakes

For the Sauce

2 tablespoons regular soy sauce

2 tablespoons dark soy sauce

2 tablespoons oyster sauce

2 tablespoons coconut sugar

2 tablespoons Chinese cooking wine

½ cup reduced-salt beef broth

2 teaspoons cornflour

¼ teaspoon white pepper
